Sunday Surf - Lunch/Dinner

My blog buddy, Citizen of the World, regularly post pictures of her meals. They look yummy usually. I generally don't have the creativity to stop and take some pictures. Especially since I usually eat at my coffee table...heh. Anyway, I finally got around to making a recipe my mother gave me years ago. It's called King Ranch Chicken Casserole. I happened to have the ingredients in my pantry, so I decided to make it. Here's what it looked like out of the oven:

Here's the recipe if you desire to have something yummy with cheese on it.

1 Chicken breast - broiled and shredded

Tortilla chips - enough to layer twice in a 9 x 9 casserole

6 oz shredded cheddar cheese

1 can Rotel

1 can cream of chicken soup

1 4oz. can of chopped green chile

1 cup finely chopped onion

milk as needed (optional)

After cooking and shredding the chicken, place in a bowl and combine with all of the other ingredients except the cheese and chips (add milk to the mixture if baking uncovered). In a 9 x 9 casserole (or similar size oven safe cooking dish), place a layer of chips on the bottom, a layer of the chicken mixture, and a layer of cheese. Repeat the order for a second layer.

Cover and bake at 350 degrees for 20 minutes. Remove lid and broil for 10 minutes (or until cheese is browning) at 450 degrees. Let casserole stand for 10 minutes uncovered for 10 to 15 minutes. Serve with a romaine salad or Mexican slaw and a crisp white wine (or lemonade). Serves 4 large portions. The full casserole has about 1540 calories or about 385 for a large serving.

I am revealing my ignorance, but what is Rotel? Typically I'm intrigued by casseroles because their purpose is to be delicious.

jennifer...Rotel is diced tomatoes and green chiles. You can find it in the canned tomato area of your grocery store...

sage...it IS yummy and if you cut the portion, it's not actually that fattening. Especially if you have a large salad with it.

I like making passed-down recipes form my mother. What I usually do when I cook is shout, "Wait, don't touch that! I have to take a picture fr my blog."

Kourtesy...thanks for stopping by! I've heard of that wine, but haven't yet tried it. I'm not a huge fan of Chardonnays, but with a name like Diablo Creek, I just might have to check it out. Now, does it meet my criteria of wine under $10 that tastes like it's at least $20? Heh.

She went with the two vines merlot...apparently she liked it, the bottle was gone when I woke up....Perhaps I need to explain that wine is for sipping not swigging

PS -- I have taken a long gander at your wine suggestions. I live near California's wine country -- South... the Temecula Valley. You have reviewed "Barefoot" which comes from this region. You will find some really great vineyards from this area...there are many.

J...oh yeah, I meant to ask, what did YOU think of the Two Vines Merlot. Not being a big fan of Merlot, and being nostalgic for the days when I was a kid, I picked up the Hearty Burgundy, which is a blend these days...

I would ABSOLUTELY LOVE that dish!!!!! Every single thing about it. Cept the chilies but I know I could go very very light on those.

Jannie...if you get really mild ones, they really don't have any heat. And with all the other ingredients they would seem pretty tame. However, if you're still extra sensitive, don't add the extra can of chile's. Just use the Original Rotel.
